The three-roll arrangement provides optimum control over the size and condition of the dough sheet. The rolls are configured to create a compression chamber which homogenates the dough. It does so without damaging the dough by over-working it. Flanges fitted to the lower roll ensure the sheet covers the full width of the conveyor band for even baking.
Consistent product
The infeed hopper contains a partitioned compartment to integrate returned scrap dough into the underside of the fresh dough. This produces a high-quality and consistent surface. It also minimizes the possibility of dough being re-used again.
