Industrial Waffle Biscuit Production Line
Soft biscuit are made with a high-sugar, high-fat formula and special techniques to maximize the inhibition of gluten formation. This results in a soft biscuit with a loose structure, crumbly texture, and melts-in-your-mouth quality. However, waffles (here referring to hard and crispy waffles/crispy waffle biscuits, not soft freshly-made waffles) are shaped using a rotary mold machine. When baked, they have a very hard and crispy texture. The reason is that waffles retain a small amount of gluten, and the ratio of oil to sugar in their formulation is lower than that of regular short biscuit.
