The recipe for soft biscuit contains relatively high amounts of fat and sugar; less water is added during the dough preparation process. After the dough is placed in the oven, it requires higher temperatures in both the lower and upper oven zones during the expansion and setting stages (for larger dough pieces, it is advisable to use a lower temperature in the lower oven zone than in the upper zone). Subsequently, the temperatures in both zones can be gradually reduced during the baking phase. As a general guide, the recommended oven temperatures are as follows: Zone 1 – approximately 250–300°C; Zone 2 – approximately 220–270°C; Zone 3 – approximately 180–200°C. Under these temperature conditions, the recommended baking time is around 5–6 minutes, although this time may vary depending on the type of product.
